Ingredients

  • 10 egg yolks

  • 250 g of sugar

  • 1/2 litre of water

  • The peel of 1 lemon

  • 1 cinnamon stick

  • Corn gofio

Directions

  • Let’s prepare the ingredients. To do this, wash the lemon well and carefully remove its peel, keeping it in reserve.
  • Now we have to prepare a delicious and sweet syrup. To do this, put the water, the lemon rind, the sugar and the cinnamon stick in a saucepan. Heat over medium heat and continue boiling until it takes consistency. To prevent it from sticking, it is advisable to stir it from time to time. When the syrup is ready (a little thick), carefully remove the cinnamon stick and the lemon peel.
  • In a large bowl separate the egg yolks from the whites and beat the yolks well until they are very creamy.
  • Gradually, with the warm syrup, add the beaten egg yolks little by little while stirring with the help of an electric mixer.
  • Now, in a bain-marie and on a rather low heat (without letting it boil), add the mixture of syrup and egg yolks until the mixture thickens, stirring from time to time.
  • Once the eggs are somewhat thick, remove from the heat. Using the whisk, beat everything again until you get a mixture that is as smooth and creamy as possible.
  • When you have achieved this, set aside until they are cold. Then pour it into crystal glasses and keep them in the fridge you are going to consume.
