Now that Canary Islands Day is approaching, there is no better traditional dish than gofio escaldado, a very simple and quick recipe that will delight the whole family.

Ingredients

  • Corn gofio

  • Fish stock or fumet

  • Mint

Directions

  • We put a ladle of fish stock on the stove and when it’s boiling we put out the fire.
  • In a large bowl or a bowl, we put the gofio and a sprig of mint.
  • We add the broth little by little without stopping stirring, so that it does not become lumpy.
  • Once it is thick and to our taste, we put the gofio in the bowls where we are going to serve it and decorate them with some onion slices and a bunch of mint.
