Ingredients

  • 2 litres of milk

  • 1/2 cup round rice

  • Lemon rind

  • 1 cinnamon stick

  • Sugar

  • 3 tablespoons of gofio

Directions

  • We reserved a large glass of milk where we will put the gofio to dilute it.
  • Boil the rest of the milk with the lemon rind and the cinnamon stick; when it is hot, add the rice and continue to simmer, stirring from time to time.
  • After 30 minutes, we remove the cinnamon and crust and add the sugar to our taste, tasting, and continue stirring.
  • When it is starting to get creamy, add the milk with the gofio and stir carefully so that it does not stick or make lumps, cooking about 5 minutes, if we see that it is very thick add a little more milk, ideally it should be creamy.
  • We passed it to a source and it is not necessary to put more cinnamon.
