We bring you that delicious gofio cupcake recipe, ideal for breakfast, afternoon snack or as a snack.

Ingredients

  • 100 grams of unsalted butter (room temperature)

  • 220 grams of sugar

  • 1 pinch of vanilla extract

  • 160 grams of flour (previously sifted)

  • 40 grams of gofio (previously sieved)

  • 120 millilitres of milk

    FOR FROSTING

  • 100 grams of butter (room temperature)

  • 200 grams of icing sugar

  • 60 millilitres of milk

  • 4 tablespoons of gofio

  • 1/2 cup vanilla extract

Directions

  • We preheat the oven to 170º and prepare 12 paper capsules.
  • We sift the flour and the gofio and set aside.
  • Lightly beat the butter and add the sugar. Continue beating until it is mixed.
  • Add the eggs, one at a time, and beat well with each addition.
  • Add some of the dry ingredients that you reserved at the beginning to the mixture and beat at low speed so as not to create a cloud of dust.
  • Continue beating and add a little milk mixed with the extract.
  • Repeat steps #5 and #6 until you finish with the ingredients and finish beating.
  • Lightly beat the butter and add the previously sieved icing sugar and beat for a few minutes, until it whitens.
  • Add half of the sifted gofio, beat and squirt the milk mixed with the extract. Continue beating until it is well integrated.
  • Add the other half of the gofio and the rest of the milk.
  • Beat until you get a homogeneous mixture.
