Ingredients
1 cup of gofio
2 tablespoons of agave syrup
2 tablespoons of panela or sugar
1 handful of pistachios
1 handful of raisins
50 grams of dark chocolate
1/ tablespoon of saffron

Directions
- Place the gofio in a bowl, add the raisins, pistachios, panela or sugar and stir.
- Add the agave syrup and start kneading. Gradually add the water and continue kneading until a dense, manageable dough is formed.
- Take portions of dough with your hands and form small, elongated balls. Put the dough balls in the fridge to cool.
- Melt the dark chocolate with the saffron in a saucepan, stirring continuously so that it does not burn, or in the bain-marie. Once melted, cook the chocolate over a low heat for several more minutes, stirring continuously.
- Take the gofio chocolates out of the fridge and dip them in the chocolate.
- Let the gofio chocolates cool in the fridge until the chocolate hardens and serve.
