Ingredients
3 eggs
125 grs of maize meal
25 g of raisins without seeds
25 g of peeled and chopped walnuts
3 tablespoons of Amaretto
40 ml sunflower oil
100 ml of milk
100 grams of sugar
1 teaspoon of lemon peel
1/2 teaspoon cinnamon powder
1 1/2 teaspoons baking powder (Royal type)

Directions
- Butter the baking tin and sprinkle it with flour, making sure to cover it well and remove the excess.
- Preheat the oven to 160 ºC (turbo function) or 180 ºC (up and down, traditional oven)
- Separate the egg whites from the egg yolks and set aside the egg whites.
- Beat the egg yolks together with the sugar, oil, milk, cinnamon, raisins, nuts and grated lemon peel.
- Add the gofio (sifted) and the baking powder.
- Mount the egg whites on a snowy spot (if we put a pinch of salt they will be very consistent) and add them to the previous mixture.
- Pour the mixture into the mould and bake it for 45 minutes.
- Once baked, let it cool down on a rack before removing it from the mould.
- Sprinkle with icing sugar and serve.
