With the month of August almost over, at Gofio La Molineta we want to end the summer with this sweet recipe of herbs and spices: Gofio sponge with apples.

Ingredients

  • 4 eggs

  • 120gr. of brown sugar

  • 1 tablespoon of orange marmalade

  • 150gr. of sour milk (sauerrham) or any other fermented: yogurt, buttermilch, sour cream…

  • 1/2 teaspoon ground vanilla or essence

  • 80ml. of corn oil

  • 150gr. of gofio

  • Approximately 150g of pastry flour

  • 1 teaspoon of baking powder

  • 1 pinch of bicarbonate

  • 3 large apples (any kind of acid or semi-acid)

  • The juice of 1/2 lemon

  • 1 pinch of cinnamon

  • 1 level tablespoon of brown sugar

  • a little peach or apricot marmalade lowered in water to brush over.

Directions

  • Preheat the oven to 180ºC. In a bowl mix the eggs, jam and sugar.
  • When the sugar has been completely integrated, giving a creamy appearance to the mixture, add the vanilla, fermented milk or yogurt and continue beating.
  • Add the oil and beat again. Separately, mix the wheat flour with the baking powder, add the gofio and add it all to the mixture.
  • Transfer the dough to a round baking tin that is not too high and let it rest for a few minutes while you prepare the fruit.
  • Peel the apples and don’t forget to wash them well. Now, you cut them into four parts, remove the seeds from the inside and cut them into rather thick segments. Put them in a bowl, add the lemon juice, cinnamon and sugar. Stir briefly and a bit sullenly and proceed to place them on the dough.
  • Bake for half an hour before taking the cake out of the oven and brushing it with a mixture of jam and water.
