Ingredients
250 grams of unsalted roasted almonds
50 millilitres of honey
30 grams of sunflower oil.
One spoonful of 100% cocoa
300 grams of gofio
125 millilitres of honey
100 grams of almond cubes
100 grams of sultanas
One teaspoon of cinnamon powder
The grating of half a lemon
125 – 150 millilitres of water
150 grams of chocolate for melting
One and a half tablespoons of sunflower oil
Almond cubes for sprinkling
Directions
- First we prepare a square mould (20 x 20), greasing it and lining it with baking paper.
- We start by preparing the base. All the ingredients are included and crushed until everything is homogeneous.
- Pour water into the base of the mould, spread it out and press it so that it is compact. We reserve in the freezer while we prepare the filling.
- For the filling, mix all the ingredients except the water.
- Add 125 millilitres of water to the mixture and continue kneading. At this point, observe if more water is needed and add it little by little, until you get a compact dough.
- Take the base out of the freezer and spread the filling over it. Press it again to make it compact. We reserve in the freezer.
- To cover, put the chocolate in pieces with the oil in a bowl and melt it in a bain-marie.
- Pour the coating over the filling and move the mould so that it is distributed over the entire surface. We must not touch the coating so that it is smooth.
- Spread a few almond cubes on the chocolate coating and leave it in the fridge.
Remove the tray by pulling out the paper and place it on a cutting board.
Cut the bars as you like, ready to enjoy.
