Today we bring you an easy and quick recipe to carry out: bread with corn gofio (2 breads), ideal to accompany all the meals of the day.

Ingredients

  • 300 grams of medium strength flour

  • 100 gram of flour strength

  • 100 grams of corn gofio

  • 325 millimeters of water

  • 12 grams of fresh yeast

  • 8 grams of salt

Directions

  • Mix the flours and rub your fingertips together with the yeast and flour to make a powder. Put it in the glass of the Thermomix or the kneading machine you use and add the water and salt, knead for 6-8 minutes, until you get an elastic, homogeneous and not very sticky dough.

  • If you make the dough by hand, make a volcano with the flour and put the water in the center, as well as the salt, and go mixing and kneading the time needed to obtain the dough, at least about eight minutes.
  • Make a ball with the dough and put it in a bowl greased with a little oil, cover it with a cloth and let it ferment for an hour and a half or until it doubles in volume.
  • After this time, pour the dough on the floured work surface, divide the dough in two and give it the desired shape.
  • Cover the two doughs again with a cloth and leave to rise for another hour and a half. Then turn each bread dough onto an oven tray, cover with the cloth and leave to rest for another 45 minutes or so and preheat the oven to 220º C.
  • When you put the bread in the oven, lower the temperature to 200º C and bake the bread for approximately 35 minutes, spraying it with water two or three times during the baking process, the first time before introducing the bread and then after the first 20 minutes.
  • Remove the corn bread when it is golden and the crust sounds hollow when knocked, and let it cool on a rack so that the base does not get wet.
