Today we bring you this original and delicious recipe from “La Cocina de Meg”: potato and gofio tortilla.

Remember that you can get the gofio in our online store, directly from the mill to your home.

Ingredients

  • 4 eggs

  • 2 potatoes

  • 2 tablespoons of millet gofio or mixture (wheat and millet)

  • Salt (to taste)

Directions

  • First of all, the potatoes have to be stewed and shredded.
  • Beat the eggs, add the potatoes and the gofio. Mix everything until you get a homogeneous dough.
  • Take a frying pan, put some drops of oil and make the omelettes (it can be a big one or several small ones)

Notes

  • Another way to make them is if we fry them with a little oil, cut in very thin slices (as in the image)
