Ingredients
4 eggs
2 potatoes
2 tablespoons of millet gofio or mixture (wheat and millet)
Salt (to taste)
Directions
- First of all, the potatoes have to be stewed and shredded.
- Beat the eggs, add the potatoes and the gofio. Mix everything until you get a homogeneous dough.
- Take a frying pan, put some drops of oil and make the omelettes (it can be a big one or several small ones)
Notes
- Another way to make them is if we fry them with a little oil, cut in very thin slices (as in the image)
